Val’s “Any” Easy Chili Recipe

Ingredients:

  • 4 tablespoon of olive oil or ANY oil

  • 1 medium yellow or ANY onion - diced

  • 12 oz package of Lightlife Smart Ground Plant-Based Crumbles (Original) (or ANY 85% lean ground meat)

  • 1.5 teaspoons of salt

  • 1.5 teaspoon of ground black pepper

  • 0.5 teaspoon of paprika

  • 0.5 tablespoon of rosemary

  • 1 tablespoon of garlic powder

  • 2 tablespoons of chili powder

  • 2 tablespoons of ground cumin

  • 1 tablespoon of brown sugar

  • 2 cups of Ocean’s Halo vegan beef flavor broth(or ANY broth)

  • 1 - 15 oz can of petite diced tomatoes

  • 1 - 8 oz can of tomato sauce

  • 1 - 16 oz can of red kidney (or ANY) beans, rinsed and drained

Instructions:

  • Cook diced onion in warmed oil, in soup pan, for 5 to 10 minutes until nice and tender

  • Add your vegan plant-based crumbles or ground beef to the soup pot. Cook for 10 minutes, until browned

  • Add all spices and stir/combine well

  • Add your broth, entire can of diced tomatoes, beans, and tomato sauce.

  • Stir occasionally

  • Cook over medium heat for 15 minutes

  • Stir occasionally

  • Reduce temperature to low heat for 15 minutes while stirring occasionally

  • Remove from heat and get all your fixins ready for comfort!!!

    (I like mine over jasmine rice or with sweet honey cornbread with vegan or regular sour cream)
